Ingredients

  • 3/4 Cup Flour
  • 6 Tablespoons Brown Sugar
  • 3/4 Cup Canned Pumpkin Puree
  • 1/4 Cup Semi-Sweet Chocolate Chips
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Baking Powder
  • 1 1/2 Tablespoons Vegetable Oil
  • 1 Large Egg
  • 1/3 Cup Skim Milk
  • 1 Teaspoon Vanilla Extract
  • Ginger
  • Cinnamon
  • Nutmeg
  • Allspice

Pumpkin Oatmeal Chocolate Chip Muffins

Time: 10 minutes prep, 25 minutes cook
Servings: 12 Muffins
 

Directions

  1. Combine the dry ingredients in a large bowl. Combine the wet ingredients in a medium sized bowl. Fold in the wet ingredients to the dry ingredients. Mixture will be kind of soupie but that's okay. Line a muffin try with cupcake sleeves (highly recommend). Bake at 375 for 18-25 minutes. .
