Ingredients

  • Filling:
  • 1 (8oz.) pkg. cream cheese, softened
  • 1 tsp vanilla extract
  • 1 egg
  • 3 TBSP brown sugar
  • Streusel Topping:
  • 1/4 cup + 1 1/2 tsp flour
  • 1/4 cup + 1 TBSP sugar
  • 3/4 tsp cinnamon
  • 3 TBSP butter, softened
  • Batter:
  • 2 1/2 cups flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 2 eggs
  • 1 1/3 cups canned pumpkins
  • 1/3 cup olive oil
  • 2 tsp vanilla extract

Directions

  1. Filling:
  2. Beat cream cheese until soft.
  3. Add vanilla extract, egg and brown sugar.
  4. Beat until smooth.
  5. Set aside.
  6. Streusel Topping:
  7. Mix flour, sugar and cinnamon.
  8. Add soft butter.
  9. Cut in until crumbly.
  10. Set aside.
  11. Preheat oven to 375 degrees
  12. Batter:
  13. In a large bowl, sift together flour, sugar, baking powder, cinnamon and salt.
  14. Add eggs, pumpkin, olive oil and vanilla extract.
  15. Beat until smooth.
  16. Fill muffin baking cups 1/2 full in muffin pans
  17. Carefully add 1 TBSP cream cheese mixture right in the middle of the batter.
  18. Sprinkle streusel topping over the batter.
  19. Bake at 375 degrees for 25-30 minutes
