Pumpkin Apple Waffles

Ingredients

  • 1/2 c. Pumpkin
  • 1/2 c. Apples -- shredded
  • 2 x Egg whites -- whipped
  • 1 c. Skim lowfat milk -- at room
  •     Temperature
  • 1/2 c. Applesauce -- at room
  •     Temperature
  • 1 c. Unbleached flour
  • 1/2 c. Brown sugar -- packed
  • 1 1/2 tsp Baking pwdr
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/4 tsp Nutmeg
  • 1/8 tsp Ginger
  • 1/8 tsp Cloves

Pumpkin Apple Waffles

Directions

  1. Prepare waffle iron with cooking spray and heat up. In a mixing bowl, combine pumpkin, apples, egg whites, lowfat milk, and applesauce. In another mixing bowl, combine flour, brown sugar, baking pwdr, cinnamon, salt, nutmeg, ginger, and cloves. Add in wet ingredients with dry ingredients just till moistened. Pour sufficient batter to fill two-thirds of the waffle iron.
  2. Cook till crisp and golden. Set aside. Repeat with remaining batter.
