Potato Crusted Lobster On A Crawfish Mashed Potato Bed Recipe

  • 1 whl Lobster - (abt 1 lb) cooked
  • 4 whl Lobster tails cooked
  • 1/4 c. Dijon mustard
  • 2 lrg White potatoes peeled
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 3 Tbsp. Extra virgin olive oil
  • 2 Tbsp. Butter
  • 1/2 lb Crawfish tails
  • 3 c. Mashed potatoes hot
  • 1/2 c. Heavy cream
  • 1 c. Red pepper coulis hot
  • 1 c. Yellow pepper coulis hot
  •     a couple of Long chives
  • 1 Tbsp. Minced chives
  • 1 Tbsp. Brunoise red peppers
  • 1 Tbsp. Brunoise yellow peppers

Directions

  1. Season each tail with salt and pepper. Rub each tail lightly with the Dijon mustard. Using your Susie Wong Threader, thread each potato half into curls. Season the potatoes with salt and pepper. Wrap each tail with the potato crust. Place the tails in a damp linen cloth and roll the tails up tightly. This will secure the potato crust to the tails. In a saute/fry pan, heat the extra virgin olive oil. When the oil is warm, saute/fry the tails for 2 to 3 min on each side or possibly till golden. Remove the tails from the oil.
  2. In a saute/fry pan, heat the butter. When the butter is melted, saute/fry the crawfish tails for 2 min. Pour the sauteed crawfish into the pan of mashed potatoes. Over low heat, add in the cream to the crawfish potatoes. Season with salt and pepper. Cook for 2 to 3 min. Remove from the heat.
  3. Mound the potatoes in the center of the plate. Arrange the lobster tails around the potatoes. Spoon the coulis around the plate. Garnish with the long chives, minced chives and peppers.
