Directions

  1. Place potatoes, onions, and salt in water to cover in a large pot. Simmer until tender, about 15 min.
  2. Put in blender or food processor (or use an immersion blender) and puree until slightly chunky.
  3. Return to soup pot.
  4. Add in half and half, butter, and cheese.
  5. Simmer until hot, but don't boil.
  6. Good served with cornbread.

    How do I convert this recipe for one person? There is no way 8 cups of potatoes is for one serving! Please help me out. Thanks
