Another recipe that I have always enjoyed since I began cooking. Strangely enough my wife has always liked this dish even when she was a kid. So I developed it a bit for our tastes. Hope you enjoy it. This method of cooking involves a pressure cooker to make the dish authentic so don't be scared of the preparation. This is a banquet in a pot so all you need to add is some crusty bread and prepare yourself for a comfort feast.

  • 1 1/2 lbs. of 80-20 ground beef
  • 3/4 cup uncooked long grain rice
  • 1 medium sweet onion, chopped fine
  • 1 tsp. garlic powder
  • 2 Tbl. Heinz 57 sauce
  • 2 Tbl. Worchestire sauce
  • 1 can, condensed tomato soup, undiluted
  • 2 Tbl. Tomato paste
  • 2 large Idaho potatoes, peeled, cut into 1-1/2" pcs.
  • 2 large carrots, peeled, cut into 1/2" rounds.
  • 1/2 cup, cold water
  • 1 tsp sea salt
  • 1 tsp. fresh ground black pepper
  • 1/4 tsp. ground cayenne pepper

Directions

  1. In a small bowl combine the tomato soup, tomato paste, and water. Stir well and set aside.
  2. Place ground beef in a large bowl. Add the onion, garlic powder, Heinz 57 sauce, Worchestire sauce, salt and pepper, cayenne pepper,and the rice to the meat. Using your hands mix the meat and the added ingredients well.
  3. Shape the meat mixture into 1-1/2" round balls and set aside. This should give you enough to cover the entire bottom of the pressure cooker. (I have a large one so judge accordingly.)
  4. Now place the pressure cooker on the stove and slowly begin to warm it up. This takes about 8 to 10 mins. but don't over do it. Slowly warming the pot will prevent the tomato sauce mixture from sticking and burning when the heat is higher.
  5. Once the pan warms up add the tomato sauce mixture and let it just begin to bubble slightly. Begin adding the meat balls in a circle to cover the entire bottom of the pot.
  6. Gently add the carrots and potatoes on top of the meat balls and you can add a little extra salt and pepper if you like the potatoes spicier.
  7. Place the top on the pot and slowly let it come to a low giggle. At that point begin timing the cooking for 10 minutes.
  8. After 10 mins. have passed you can remove the pressure cooker from the stove and gently run cold water down the side of the pressure cooker (not near the valve on top) to quickly reduce the pressure.
  9. Once the pressure has subsided open the pot and gently spoon out the vegetables first then gently scoop out each meatball.
  10. I like to place the meat balls in one dish and the vegetables and sauce in another.
  11. Prepare a side of crusty bread and enjoy.
