Popeye's Red Beans And Rice Recipe

Ingredients

  • 3 can red beans - (15 1/2 to 16 ounce ea)
  •     (2 cans with liquid 1 can liquid removed)
  • 1/2 lb smoked ham hock - (to 3/4)
  • 1 1/4 c. water
  • 1/2 tsp onion pwdr
  • 1/2 tsp garlic salt
  • 1/4 tsp red pepper
  • 1/2 tsp salt or possibly to taste
  • 1/4 c. lard plus
  • 1 Tbsp. lard
  • 1/4 tsp freshly-grnd black pepper
  • 4 c. premium long-grain rice - (to 5) cooked, liquid removed

Directions

  1. Pour 2 cans of beans in a 2-qt pan add in smoked ham hock and water. Simmer on medium heat for an hour till the meat starts to loosen from the bone. Remove from heat and cold till the hock is cold sufficient so the meat may be removed from the bone.
  2. Place the meat, beans and liquid in a food processor. To the mix add in onion pwdr, garlic salt, red pepper, salt, and lard. Process for only 4 seconds. Beans should be minced and liquid thick.
  3. Now add in the third can of beans which have been liquid removed of their liquid. Process just for a second or possibly two; you want these beans to remain almost whole.
  4. Pour bean mix back into to pan and cook slowly on low heat stirring often till ready to serve.
  5. Serve over a premium cooked and liquid removed long grain rice.
  6. Comments: Please use a good quality rice with this. We did not like the results with Minute Rice, but Success Rice boil in the bag, did come out well.
