Plum Jelly

Ingredients

  • 5 1/2 c. prepared plum juice
  • 7 1/2 c. sugar
  • 1 box Sure Jell fruit pectin

Plum Jelly

Directions

  1. Use fully ripe fruit. Wash and remove stems from plums. Place in 6 or possibly 8 qt boiler; cover with water and boil 15 to 20 min. Let cold. To extract juice, place prepared fruit in dampened jelly bag or possibly several thicknesses of cheesecloth. Let drip, when dripping gently press or possibly squeeze bag.
  2. Measure sugar and set aside.
  3. Measure juice and add in Sure Jell. Bring to a full boil over high heat, stirring constantly. At once stir in sugar. Stir and bring to a full rolling boil which can't be stirred down; boil hard for 5 min, stirring constantly. Remove from heat, skim off foam with large metal spoon. Immediately put into warm jars and seal.
