Ingredients

  • Butter one side of each piece of bread, place a slice of
  • mozzarella on each opposite side of the bread then top two slices of bread with
  • half of a sliced avocado then top avocado with gouda, then place the opposite
  • side of the bread with one slice of the mozzarella then place each sandwich on
  • a hot griddle and grill until each side is toasted a crispy.

I originally found this recipe on Pinterest for a Avocado Grilled Cheese Sandwich but since then

the link has gone dead.

I couldn’t really tell you what was on the sandwich. I decided to take the concept

and try to make my own. There are no rules so why not improvise?

They turned out fantastic ...who knew? This is a delicious and wonderfully

rich sandwich. It’s cheesy, creamy, and decadent. Like I said it’s rich! I don’t

think you could have more than one without paying for it dearly! This reminds

me of something you would have at a high end deli or a vegetarian restaurant. If

you love avocado and you love cheese this will be a crowd pleaser.

Serves 2

4 slices 100% whole wheat bread

1 medium avocado

4 sandwich size slices mozzarella cheese

2 large slices Smoked Gouda cheese

¼ stick butter.

Directions:

  • Butter one side of each piece of bread, place a slice of
  • mozzarella on each opposite side of the bread then top two slices of bread with
  • half of a sliced avocado then top avocado with gouda, then place the opposite
  • side of the bread with one slice of the mozzarella then place each sandwich on
  • a hot griddle and grill until each side is toasted a crispy.
  • Your sandwich should be one slice of bread mozzarella, avocado,

Gouda, mozzarella then last piece of bread.

*Please Note* if you are using

smoked gouda verses non-smoked gouda the smoked gouda will most likely

not melt which is the point of the two slices of the mozzarella cheese to seal

in the avocado and gouda together into the sandwich. I highly recommend the smoked gouda.
