Pineapple Raisin Oat Bran Muffin

Ingredients

  • 4 oz Oat Bran
  • 2/3 C Dry Powder Milk (use dry do not add water)
  • 2 Eggs
  • 1 Tbls Baking Powder
  • 1.5 tsp baking soda
  • 1 Tbls Cinnamon
  • 1/3 C Sweetner
  • 1 20oz Can Crushed Pineapple undrained
  • 3 oz Raisins

Directions

  1. Mix let sit 20 minutes.
  2. Spray muffin pan (DO NOT use cupcake liner!)
  3. Pour batter into 12 muffin cups
  4. Bake 20-25 minutes
  5. Note these muffins do not rise, sometimes I add a few shredded carrots and nuts also.
  6. These are addictive!
