%20made%20the%20most%20delicious%20and%20simple%20enchiladas,%20and%20our%20friend%20Seth%20brought%20an%20amazing%20guacamole%20with%20chopped%20mangoes%20(!)%20in%20it.%20We%20also%20had%20margaritas,%20chili,%20rice,%20and%20corn%20bread.%20I%20could%20eat%20a%20meal%20like%20that%20every%20day%20of%20the%20week!!%20I%E2%80%99d%20volunteered%20to%20do%20dessert,%20but%20as%20the%20day%20drew%20closer%20I%20realized%20I%20didn%E2%80%99t%20have%20enough%20rhubarb%20handy%20to%20make%20the%20crumble%20I%E2%80%99d%20envisioned%20for%20the%2010-12%20people%20expected,%20so%20I%20had%20to%20go%20to%20plan%20B.%20I%20racked%20my%20brain%20trying%20to%20think%20of%20something%20festive%20but%20light%20that%20could%20feed%20a%20good-sized%20crowd,%20including%20many%20toddlers.%20Then%20I%20remembered%20how%20well%20this%20orange%20creamsicle%20cake%20turned%20out%20a%20couple%20years%20ago,%20and%20in%20that%20vein%20made%20an%20even%20EASIER%20dessert%20with%20crushed%20pineapple%20and%20angel%20food%20cake.%20It%20has%20just%20two%20ingredients,%20not%20including%20any%20whipped%20cream%20you%20might%20want%20to%20add,%20and%20it%20came%20out%20so%20delicious!%20Perfect%20for%20summer%20and%20so%20easy,%20it%E2%80%99s%20definitely%20something%20I%E2%80%99m%20going%20to%20make%20again%20and%20again.%3C/p%3E%3Cp%3EPineapple%20Angel%20Food%20Cake%3C/p%3E%3Cp%3EINGREDIENTS%3C/p%3E%3Cp%3Ewhipped%20cream%20if%20you%20want%20it%20for%20topping!%3C/p%3E%3Cp%3EDIRECTIONS%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20and%20butter%20or%20Pam-spray%20a%209%20x%2013%20baking%20dish%20(I%20used%20glass).%3C/p%3E%3Cp%3EIn%20a%20mixing%20bowl,%20combine%20the%20dry%20cake%20mix%20with%20the%20crushed%20pineapple,%20juice%20included.%20(Don%E2%80%99t%20add%20water%20per%20the%20box%20instructions!)%20Stir%20until%20evenly%20combined.%20Pour%20into%20your%20baking%20dish%20and%20bake%20for%2030-40%20minutes%20(mine%20took%20closer%20to%2030%20%E2%80%94%20make%20sure%20it%20doesn%E2%80%99t%20burn!)%20It%E2%80%99s%20done%20for%20sure%20when%20a%20toothpick%20poked%20in%20the%20middle%20comes%20out%20clean.%20Let%20cool%20and%20serve!%3C/p%3E%3Cp%3ENotes:%20I%20could%20only%20find%20pineapple%20chunks,%20so%20I%20buzzed%20them%20through%20the%20food%20processor%20quickly%20to%20pulverize%20them.%20The%20consistency%20you%20see%20there%20in%20my%20photos%20is%20what%20you%20want.%20I%20didn%E2%80%99t%20serve%20this%20with%20ice%20cream,%20but%20I%20think%20it%20would%20go%20well%20together!%20Because%20I%20was%20taking%20this%20to%20a%20potluck,%20I%20just%20bought%20a%20can%20of%20whipped%20cream,%20though%20I%20usually%20prefer%20to%20just%20make%20my%20own%20(especially%20ever%20since%20Mark%20got%20me%20a%20stand%20mixer).%20You%20could%20also%20make%20this%20in%20a%20cupcake%20tin%20with%20liners%20instead%20of%20a%20glass%20baking%20dish.%20Just%20be%20sure%20to%20cross-reference%20the%20cooking%20time%20on%20the%20side%20of%20the%20cake%20mix%20box%20if%20you%20drastically%20alter%20the%20pan%20size.%3C/p%3E%3Cp%3EEnjoy!%20And%20have%20a%20wonderful%20weekend!%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
