Pimento Cheese Quiche Appetizers Recipe

Here is a quick little recipe that yields a satisfying 2 bite appetizer. Just don’t do what I did – forget to thaw the phyllo pastry! I ended up making this the day after I had planned to!

Ingredients

  • 24 oz pimento cheese
  • 4 eggs
  • 2 T flour
  • 20 sheets of phyllo pastry

Directions

  1. Mix the first 3 ingredients well with an electric mixer.
  2. Separate the phyllo dough into 5 sets of 4 sheets.
  3. (work with one set at a time because they dry out)
  4. Cut each set of 4 sheets into 12 3”x3” squares.
  5. Set each of the 12 squares into a greased 12-muffin MINI muffin pan.
  6. Scoop 1 tablespoon of the pimento mixture into each phyllo “shell”.
  7. Bake at 350 degrees for 12-14 minutes.
  8. Yield: 60 appetizers
