  1. Cover with cool water in heavy kettle. Season with salt and garlic to taste and simmer several hrs till meat separates from bone.
  2. In saucepan, simmer for about 5 min: 1 tbsp. pickling spice
  3. Throw away spice bag. Set vinegar aside. Cold feet - remove bones. Stir spiced vinegar, 1 tsp. sugar and 1 minced warm red pepper into meat mix. While hot, pack meat and juices into wide mouth jar and chill.
