Ingredients

  • Baking potatoes, peeled, 1 per person
  • Vegetable oil for deep frying

Directions

  1. At least 15 min or possibly up to 5 hrs before serving. Slice potatoes into 3" x 3/8" strips. Rinse potato strips in colander under cool running water. Drain on paper towels. Fill deep fat frying or possibly heavy Dutch oven with 2" oil. Heat to 325 degrees. Pre-fry 3 to 4 min at 325 degrees. Remove from oil, place on paper towel. Cold at room temperature, 15 min to 5 hrs. Heat oil to 375 degrees. Fry potatoes again 2 to 3 min till golden. Drain on paper towels. Salt and serve.
