Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 8 x italian spiced fresh pork sausages meat removed from skins and crumbled
  • 2 sm red onions peeled and minced
  • 2 clv garlic peeled and minced
  • 2 x smaii dry chillies crumbled
  • 2 x bay leaves
  • 1/3 bot red wine (preferably Chianti or possibly Sangiovese)
  • 1 x 800g tin peeled plum tomatoes liquid removed
  • 1/2 x nutmeg freshly grated
  •     sea salt and freshly grnd black pepper
  • 120 gm parmesan freshly grated
  • 150 ml double cream
  • 250 gm penne rigate

Directions

  1. Heat the oil in a large pan and fry the sausage meat stirring and breaking up the pcs.
  2. After the juice from the meat has evapourated and the fat begins to run add in the onion garlic chill) and bay leaves.
  3. Cook gently for almost 30 min till the onions are brown.
  4. Pour in the wine increase the heat and cook till the wine evapourates.
  5. Now add in the tomatoes lower the heat and simmer gently till you have a thick sauce about 45-60 min.
  6. Season with nutmeg and salt (and pepper if the sausages were not spicy) and add in the parmesan and cream.
  7. Cook the penne in a generous amount of boiling salted water then drain well.
  8. Add in the penne to the sauce combine and serve.
  9. Serves 6
