Penne In Vodka Sauce

Ingredients

  • 2 x dry red peppers
  • 3/4 c. vodka
  • 2 2/3 c. whipping cream
  • 10 Tbsp. butter
  • 6 ounce tomato, fresh ripe, peeled, seeded and minced
  • 1 lb penne
  • 3/4 c. parmesan, grated
  • 3 Tbsp. parsley, fresh, chopped
  •     pepper, to taste
  •     Soak red peppers in vodka for 24 hrs.

Penne In Vodka Sauce

Directions

  1. Combine cream, butter and tomatoes in heavy large saucepan. Simmer till reduced by 1/3, about 12 min. Cook pasta according to directions. Drain and add in to sauce. Boil 1 minute, stirring constantly. Throw away red peppers, and add in vodka to pasta.
  2. Simmer till sauce thickens, stirring constantly, about 3 min. Fold in 3/4 c. Parmesan and parsley.
  3. Serve immediately, passing additional Parmesan and pepper separately.
