Ingredients
- 2 x dry red peppers
- 3/4 c. vodka
- 2 2/3 c. whipping cream
- 10 Tbsp. butter
- 6 ounce tomato, fresh ripe, peeled, seeded and minced
- 1 lb penne
- 3/4 c. parmesan, grated
- 3 Tbsp. parsley, fresh, chopped
- pepper, to taste
- Soak red peppers in vodka for 24 hrs.

Penne In Vodka Sauce

Directions
- Combine cream, butter and tomatoes in heavy large saucepan. Simmer till reduced by 1/3, about 12 min. Cook pasta according to directions. Drain and add in to sauce. Boil 1 minute, stirring constantly. Throw away red peppers, and add in vodka to pasta.
- Simmer till sauce thickens, stirring constantly, about 3 min. Fold in 3/4 c. Parmesan and parsley.
- Serve immediately, passing additional Parmesan and pepper separately.
