Pecan Banana Muffins

Ingredients

  • 3 Ripe Bananas, mashed
  • 1 Cup Chopped Pecans
  • 1 Cup Brown Sugar
  • 1/2 Cup Butter
  • 1 Egg
  • 1 Tsp. Vanilla
  • 1/8 Tsp. Ground Cloves
  • 1/4 Tsp. Ground Ginger
  • 2 Cups All Purpose Flour
  • 1 Tsp. Baking Soda

Directions

  1. Heat oven to 350 degrees.
  2. Crush bananas and set aside
  3. Beat together brown sugar and butter.  Beat in egg, vanilla, cloves and ginger.  Add crushed banana and mix well.
  4. Add flour and baking soda and beat well.  Stir in crushed pecans.
  5. Grease muffin tins or use paper muffin liners.  Fill to the top.
  6. Bake at 350 degrees for 18 to 20 minutes or until toothpick inserted in center comes out clean.
  7. This recipe makes 12 muffins.
