Ingredients
- 1tsp bicarbonate of soda, dissolved in a 1/4 c milk
- 2 eggs
- 1/8 tsp salt
- 2 c brown sugar
- 3 cups flour, sifted
- 125 g margerine/ butter
- 4 tbsp peanutbutter

Peanutbutter cookies
Time: 30 minutes prep, 12 minutes cook
Servings: 60
Directions
- Preheat oven to 350*F
- Beat the sugar and butter until creamy
- Add one egg at a time, beating well after each addition
- Add peanutbutter and milk mixture,beat well
- Fold in the sifted flour, don't overmix
- Allow to rest 30 minutes while preparing the biscuit sheets, they must be free of any grease in order for the biscuits to stick
- Alternatively, you can roll small balls, place them on a greased sheet and press flatter using a fork
- Bake for approximately ten minutes
- Allow to cool slightly before transferring them to a cooling rack
- If they are stuck, they are to cold, then replace the sheet back in the oven for a minute or two
- Store in a airtight container
