Peanut Butter whoopie pies Recipe
A cakey, tender whoopie pie with a rich peanut butter frosting center!

Ingredients
- Cookies:
- 3 1/2 cups All purpose flour
- 1 1/2 cups unsweetened cocoa powder
- 1 Tablespoon baking soda
- 1 Teaspoon baking powder
- 1 cup (2sticks) butter
- 2 cups sugar
- 2 large eggs
- 2 cups buttermilk
- 2 teaspoons vannila extract
- Frosting:
- 1 1/2 cups smooth peanut butter
- 1 cup butter
- 1 1/2 cups confectioners sugar
- salt
Directions
- Preheat oven to 400F
- Line 2 baking sheets with parchment
- sift together flour,cocoa powder,baking powder,and baking soda
- beat butter,and sugar in a mixer until fluffy
- add vannila,eggs, and buttermilk
- beat until combined, adding dry ingredients slowly
- Drop 2 Tb of batter spaced 2 inches apart on the baking sheets
- bake for 8 minutes, rotating half way through
- with an electric mixer beat butter and beanut butter until smooth
- add confectioners sugar and beat until fluffy
- spread a heaping tablespoon of frosting onto a cookie and sandwich betweeen another one
- repeat with remaining cookies and frosting
