Love fresh fruit, and peaches are one of my favorite, our tree gets so full and I love baking pies. Make them for neighbors as well as friends. Everyone appreciates a good pie

Ingredients
Crust : This can be made or purchased
5 Cups peaches
1/2 Cup brown sugar
1/2 Cup white sugar
1 Tsp Cinnamon
2 Tablespoon Corn Starch
1 Tablespoon butter
Directions
In a large bowl place peeled and cut up peaches, add brown sugar and white sugar and allow to sit for 1 hour (yes that long) make your favorite crust as you wait. After an hour place the peaches in a sieve and drain all the liquid into a heavy pan. Take this liquid and place over medium heat and bring to a slow steady simmer, add cinnamon, cornstarch and butter, allow to thicken. When thick pour over the peaches and blend gently to incorporate the syrup. Pour the peach mixture into a prepared raw crust and then top with either a full crust or a crust you have cut out. Bake for 55 minutes, until brown and bubbly. Make sure you place a sheet pan under pie as it with bubble out..
