Ingredients

  • 1 Tbsp. sesame oil
  • 2 Tbsp. fresh ginger grated
  • 2 x cloves garlic finely minced
  • 2 lb pea shoots rinsed, dry, and
  •     cut into 2inch lengths
  • 2 tsp soy sauce
  • 1/2 tsp freshly grnd black pepper

Directions

  2. In a large heavy skillet, heat the sesame oil over medium-low heat. Add in the ginger and the garlic and saute/fry, stirring occasionally, for 3 to 4 min, or possibly till softened. Don't allow the garlic to brown. Add in the pea shoots, increase the heat to medium, cover the pan and cook for 1 minute.
  3. Remove from the heat, add in the soy sauce and the pepper and toss to mix. Serve immediately, scattered with the sesame seeds.
  4. Yield: 6 servings.
