Ingredients

  • For Paste:
  • 2 red onions
  • 6 cloves garlic
  • 1 inch ginger
  • 2-3 green chilli or to taste
  • 3 tomatoes (blanched and peeled)
  • 3-4 kolhapuri dry red chilli (soaked in warm water)or to taste
  • For Tampering:
  • 2 tablespoon oil
  • 1 tablespoon butter
  • 1 bay leaf
  • 1/4 teaspoon turmeric powder
  • 1/2 cup capsicum (finely chopped)
  • 100 gram potatoes (boiled)
  • 100 gram bottle gourd (boiled)
  • 50 gram green peas (boiled)
  • 50 gram cauliflower (boiled)
  • 25 gram cabbage (boiled)
  • 25 gram carrots (boiled)
  • 25 gram french beans (boiled)
  • 2 tablespoon fresh coriander (chopped)
  • 1 teaspoon dry coriander powder
  • 1 teaspoon chat masala
  • 1 teaspoon red chilli powder or to taste
  • 3 tablespoon pav bhaji masala or to taste
  • 1/2 teaspoon sugar
  • 2 teaspoon lemon juice or to taste
  • salt to taste
  • For Garnish:
  • Butter - as needed
  • Finely chopped red onions - as needed
  • Fresh green chopped coriander - as needed
  • Lemon wedge - as needed
  • For serving:
  • PAV ( Indian Bread or Bun ) -roasted with butter - as needed

Time: 30 minutes prep, 30 minutes cook
Servings: 4 person
 

Directions

  1. For Paste:
  2. In a grinder add all ingredients and make a fine paste,keep aside.
  3. For tempering:
  4. In a pan heat butter and oil,add bay leaf,capsicum and turmeric powder,swat till it softs and then add crushed paste,saute for 5 min or till light brown.
  5. Now add tomato paste and swat till oil release,add all boiled vegetables and fresh coriander,swat for 5-7 min and mash with masher.
  6. Now add all spices ,salt and sugar and mix well,simmer for a while or till oil release,put of the flame.add lemon juice and mix well,again mash with masher.
  7. Now garnish and serve hot with butter roasted or masala pav.....if wish can serve garlic chutney,on side for extra heat.
  8. NOTE:
  9. I added veggies according .to my choice,you can add veggies in any ratio.
  10. While making for kids avoid heat just add little bit pav bhaji masala n lemon juice ,but must try for them as it is full of veggies.
