Directions

  1. Cook pasta in a large pot of boiling water for 8 to 10 min. Drain & rinse with cool water. Set aside.
  2. While pasta is cooking, heat 2 ts balsamic vinegar & 2 ts water in a large skillet & saute/fry onions & garlic over medium heat. Stir frequently. Add in tomato paste, dissolved in 1 c. water. Stir gently & add in tomatoes. Cook, stirring occasionally until vegetable are very soft.
  3. Dissolve cornstarch in 2 tb cool water & pour into blender. Add in miso & cooked vegetables. Puree until smooth. Return puree to skillet. Add in 3 tb balsamic vinegar & parsley & heat through. Toss pasta with sauce & serve warm.
