Pasta Con Spinaci E Ricotta (Pasta With Spinach And Ricotta Recipe

Ingredients
- 1 c. Cooked and minced spinach, with excess water squeezed out
- 1 sm Onion, chopped
- 2 Tbsp. Sweet butter
- 1 c. Heavy cream
- 1 lb Ricotta
- 1 lb Pasta, (shells, bows etc. cooked according to package directions)
- 1/2 c. Freshly grated Parmesan cheese
Directions
- In a saucepan saute/fry the chopped onion in butter.
- Add in the cooked spinach, heavy cream and ricotta. Stir and cook for about 3 min.
- Combine cooked and liquid removed pasta with spinach/cheese mix and toss with Parmesan cheese. Serve immediately.
