Passion Fruits

Passion fruit or granadilla is a tropical fruit, either yellow or purple at maturity. It's soft and with pulpy juice with numerous pitted seeds.

Lets see what are the benefits,

2/ Good source of vitamin A & C, potassium, iron, copper, magnesium and phosphorus.

  • 3 cups all purpose flour
  • 1 tsp baking powder
  • 3/4 cup buttermilk
  • 3 tbsp passionfruit pulp
  • 1 lb butter, softened
  • 1 1/2 cup sugar
  • 4 eggs

1/ Preheat oven to 180 deg c. Grease two 9” loaf pans with butter.

2/ Sift flour, baking powder and salt into a large bowl.

3/ Combine buttermilk and passionfruit syrup in a small bowl.

4/ Beat butter in mixer. Add sugar and beat until fluffy. Add eggs, one at a time.

5/ Add dry ingredients, 1/3 at a time, alternating with buttermilk mixture,

1/3 at a time.

6/ Pour batter into prepared pans.

7/ Bake 1 hour-1 hour 15 minutes, or until an inserted toothpick comes out clean.

8/ Serve with passion fruit ice cream.

Passion fruit Ice Cream

If you like ice cream, why stop at one scoop? Have two scoop, three scoop! Too much is never enough.

2 cups heavy cream

1/2 cup milk

1 cup sugar

5 large egg yolks

1 1/2 cups passion fruit pulp, divided

1/ Combine the heavy cream, milk, sugar and passion fruit pulp in a medium saucepan over medium-low heat and cook, stirring until the sugar is dissolved and the mixture is warm.

2/ Place the yolks in a small bowl and, while whisking constantly, add about 1/4 cup of the cream mixture to the eggs and stir until smooth.

3/ Gradually add the yolk mixture to the saucepan, again whisking constantly.

4/ Cook, stirring often, until the mixture coats a wooden spoon.

5/ Let cool to room temperature and then cover and chill in the refrigerator overnight.

Freeze in an ice cream machine according to the manufacturer’s instructions.

Making Ice Cream Without Ice Cream Maker

1/ Making ice cream can be done without the use of ice cream maker. An electric mixer or food processor can be used to break up the ice crystals during the freezing process.

2/ Place ice cream mixture in the freezer and allow the mixture to freeze for 2 hours.

3/ Remove from freezer and beat mixture to break up the ice crystals that are beginning to form.

Repeat step 2 & 3 = 3 times for a smooth and creamy ice cream.

4/ The ice cream should be thick but soft to scoop. If not thick enough return to freezer for additional freezing time and beat the mixture again.

5/ Once ice cream thickened properly, stir in any condiment of your choice and mix well.

6/ Pour in air tight container to freeze till set.
