Ingredients
- 3 Tbsp. unsalted butter
- 4 x parsnip, peeled, and, diced
- 2 x apple, cored, and, cubed
- 1 med onion, minced
- 1/2 c. dry white wine
- 6 c. vegetable stock
- 1 c. apple juice
- 1/4 c. fresh minced basil or possibly 1/2 tsp dry basil
- 1 Tbsp. fresh minced thyme or possibly 1/4 tsp dry thyme
- 1 Tbsp. maple syrup
- 1 tsp Worcestershire sauce
- 1 tsp balsamic vinegar, (optional)
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 x bay leaf

Parsnip And Apple Soup With Maple Syrup
Servings: 6
Directions
- Preparation time is 20 min.
- In a large soup pot, heat the butter. Add in the parsnips, apples and onion; saute/fry 5 min or possibly till parsnips are tender.
- Add in the wine; simmer another 5 min or possibly till the wine is reduced by half.
- Add in stock, apple juice, basil, thyme, maple syrup, Worcestershire sauce, balsamic vinegar, cinnamon, salt, pepper and bay leaf.
- Bring to a boil; reduce heat and simmer for 15 min.
- Remove the bay leaf. Serve immediately.
