Parsnip And Apple Soup With Maple Syrup

Ingredients

  • 3 Tbsp. unsalted butter
  • 4 x parsnip, peeled, and, diced
  • 2 x apple, cored, and, cubed
  • 1 med onion, minced
  • 1/2 c. dry white wine
  • 6 c. vegetable stock
  • 1 c. apple juice
  • 1/4 c. fresh minced basil or possibly 1/2 tsp dry basil
  • 1 Tbsp. fresh minced thyme or possibly 1/4 tsp dry thyme
  • 1 Tbsp. maple syrup
  • 1 tsp Worcestershire sauce
  • 1 tsp balsamic vinegar, (optional)
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 x bay leaf

Parsnip And Apple Soup With Maple Syrup

Directions

  1. Preparation time is 20 min.
  2. In a large soup pot, heat the butter. Add in the parsnips, apples and onion; saute/fry 5 min or possibly till parsnips are tender.
  3. Add in the wine; simmer another 5 min or possibly till the wine is reduced by half.
  4. Add in stock, apple juice, basil, thyme, maple syrup, Worcestershire sauce, balsamic vinegar, cinnamon, salt, pepper and bay leaf.
  5. Bring to a boil; reduce heat and simmer for 15 min.
  6. Remove the bay leaf. Serve immediately.
