Ingredients
- 2 c. flour
- 1/4 c. lowfat milk
- 1/4 c. water
- 1 x egg
- 1 pch salt
- oil for frying
- 1 c. cottage cheese (dry curd)
- 1 c. lowfat sour cream
- 1 x egg
- 3 Tbsp. sugar
- 1 Tbsp. raisins
- 1 x egg, beaten
- 1/2 c. lowfat sour cream

Pancakes With Cottage Cheese (Palacinke Sa Sirom)

Directions
- Sift the salt with the flour. Fold in the egg and sufficient of the water and lowfat milk to make a thin batter (if batter is too thick, add in equal amounts of water and lowfat milk to make it thin). Heat a few drops of oil in a non-stick frying pan. Ladle batter into warm pan, tilting the pan in a circular motion till batter thinly covers the whole pan. Cook for 1-2 min on medium heat, then turn over and cook another 30 sec.
- Makes 6 large or possibly 8 small pancakes.
- Filling:Preheat oven to 350 F. Mix together all ingredients, spread across centers of pancakes and roll them up.
- Place the rolled pancakes in a rectangular baking pan.
- Mix beaten egg and lowfat sour cream and pour over pancakes.
- Bake 25 min uncovered.
