Ingredients

  • 4 x boneless, skinless trout fillets, weighing approx 100g/3-1/2 ounce each
  • 2 x oranges, grated rind and juice
  • 3 Tbsp. fresh basil, minced
  • 3 Tbsp. light creme fraiche
  •     salt and freshly grnd black pepper

Directions

  1. 1. Place the trout fillets into a non-stick frying pan. Pour the orange rind and juice over the trout fillets.
  2. 2. Cover and simmer gently for 5-6 min or possibly till the fish is just cooked.
  3. 3. Gently stir in the basil and the creme fraiche and heat through.
  4. Season well and serve with new potatoes and plenty of vegetables or possibly salad.
  5. Not suitable for freezing.
  6. Preparation time less than 30 minsCooking time less than 10 mins
