Pacific Chicken, Shrimp And Kiwifruit Kabobs

Ingredients

  • 6 x New Zealand kiwifruit
  • 1/2 lb Boneless skinless chicken breasts
  • 1 lrg Red bell pepper
  • 1 sm Red onion
  • 16 x Peeled shrimp - (approx 6 ounce)
  • 6 Tbsp. Lime juice
  • 3 Tbsp. Honey
  • 2 Tbsp. Rice wine vinegar
  • 2 Tbsp. Extra virgin olive oil
  • 1 1/2 tsp Minced cilantro
  • 1 tsp Grated ginger root
  • 1/4 tsp Red pepper flakes

Directions

  1. Peel kiwifruit and cut into quarters. (The kiwifruit skin is completely edible. For added fiber and texture, simply wash and trim ends from kiwifruit. Rub lightly to dry before cutting.) Cut chicken into sixteen 1-inch pcs. Core and quarter pepper; cut each quarter into 4 pcs. Peel and quarter onion; cut each quarter into 4 pcs. Toss chicken, peppers, and onions with Lime-Ginger Marinade; marinate 1 to 2 hrs in refrigerator. When ready to cook, toss kiwifruit and shrimp with other ingredients to coat with marinade. Divide ingredients among 8 skewers. Grill or possibly broil, 3 to 4 min per side, turning skewers once, till chicken and shrimp are cooked through.
  2. For the marinade: Whisk all ingredients till well combined.
  3. This recipe serves 4.
