  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 cup corn
  • 1/4 cup butter
  • 2 chicken bouillon cubes
  • 2 cups boiling water
  • 1 cup uncooked long-grain rice
  • 3/4 cup beer
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • Pace Picante Sauce on the side

Directions

  2. 1. Saute onion, green pepper, and corn in butter in a saucepan over medium heat until tender. Dissolve bouillon cubes in boiling water; add bouillon mixture to onion and green pepper mixture. Stir in rice, beer, and seasonings. Bring to a boil; cover, reduce heat, and simmer 30 to 40 minutes or until liquid is absorbed and rice is tender.
