Oven Roasted Vegetables

Ingredients

  • 3 Tbsp. Extra virgin olive oil
  • 1 c. Pearl onions, peeled
  • 1 sm Leek, cleaned and cut Into Triangle Shapes
  • 1 stalk celery, peeled and cut Into Triangle Shapes
  • 1 x Carrot, peeled and cut Into Triangle Shapes
  •     Salt to taste

Oven Roasted Vegetables

Servings: 4
 

Directions

  1. Preheat oven to 350 degrees.
  2. Bring a medium ovenproof saute/fry pan to medium heat. When warm, add in oil and all the vegetables. Season with salt. Saute/fry for 3 min. Place in oven.
  3. Roast vegetables for 8 min, stirring occasionally, till golden.
  4. Keep hot till ready to use.
  5. Yield: 4 servings
