Directions

  1. Corn Flake Chicken Preparation:
  2. Preheat Oven 350 degrees:
  3. Place the corn flakes in a food processor and add the spices. Give a few chops. Do Not over process the corn flakes and make them too fine.
  4. Combine the egg, milk and flour in a bowl and mix until smooth. Dip the chicken in the batter and then coat with the cereal.
  5. Drizzle a little olive oil in the bottom of a baking dish and place the chicken in the baking dish. Drizzle a little olive oil on top of the chicken and bake for about 45–50 minutes or until the juices run clear. Let the chicken rest, before serving, for about 5-10 minutes after taking it out of the oven.
  6. Sweet Garlic Broccoli :
  7. Heat a saucepan with a drizzle of olive oil and place the broccoli in the pan. Add a cup of water and cover. In a small bowl combine the brown sugar, lemon juice and garlic. Add to the broccoli and steam for about 5-6 minutes. Do not overcook the broccoli. Let it remain a beautiful green.
