Directions

  1. Preheat Oven 350 degrees:
  2. Place the chicken thighs in a baking pan.
  3. In a small bowl combine the pineapple juice, lemon juice, drizzle of olive oil and the salt, pepper, ground oregano, ground cumin and mix. Drizzle this over the chicken.
  4. Sprinkle the crushed croutons over the chicken and grate the Romano cheese over the chicken.
  5. Place in the oven and bake 45-50 minutes or until the juices run clear.

    Bellissimo! This is right up my alley, and in keeping with my new eating plan. I have a fresh pineapple that needs to be used asap, so I'm going to use it to make my supper tonight. This is especially a treat for me, because when my mom was home, I couldn't make this -- she hates pineapple (the only one on earth who does, I think). Thank you, Catherine!
