Our Traditional Lamb Roast

Ingredients

  • 2kg lamb leg
  • 3 cloves garlic (sliced)
  • 2 rosemary (optional)
  • Salt and pepper
  • 2 cups water

Our Traditional Lamb Roast

Time: 10 minutes prep, 2 hours cook
 
 

Directions

  1. Preheat oven to 180C
  2. With a small sharp knife, pierce the lamb every 3cm or so.
  3. Stuff each incision with a slice of garlic and a few rosemary leaves.
  4. Sprinkle the roast with salt and ground black pepper.
  5. Place on roasting pan-rack with 2cups of water.
  6. Turn the lamb leg over after 1hr, then resume roasting for 1 more hour.
  7. Remove from the oven and rest in the pan under foil for half an hour.
  8. Slice into serving portions with your choice of side dish and gravy.
  9. Rule of thumb: 1hr roasting time for every kilo of meat.
