Ingredients

  • 2/3 c. Plum sauce - Or possibly Duck sauce
  • 2 Tbsp. Dry Sherry
  • 1 tsp Oriental Sesame sauce
  • 2 Tbsp. Peanut oil Asian or possibly domestic cool pressed
  • 2 x Clove garlic chopped or possibly pressed
  • 1/4 c. Fresh Cilantro leaves minced
  • 1/2 tsp Dry red chili pepper crushed
  • 2 tsp Hoisin sauce
  • 1 Tbsp. Soy sauce - low sodium
  • 1 Tbsp. Ginger root - grated

Directions

  1. Combine the plum sauce, hoisin, sherry and soy sauce in a nonreactive mixing bowl. Whisk in the oils a little at a time. Add in the ginger, garlic, cilantro and chili pepper.
  2. Makes 2 c.. Recommended cuts: Chicken Breasts
  3. (4 to 6 hrs) Chicken Wings (6 to 8 hrs) Spare Ribs (8 hrs to overnight)
