Orange-Ginger Dressing

This was the house dressing at a restaurant I worked in. I used to make this at least once a week!
Keep in mind, I made about 3/4 of a gallon at a time, so you can cut the recipe as you see fit.

Ingredients

  • 2 cans frozen concentrated orange juice, thawed
  • 1 quart rice wine vinegar
  • 1/2 cup minced garlic
  • 1/8 cup Dijon mustard
  • 1 cup (and a bit more, if preferred) soy sauce
  • 1/4 cup grated ginger, with the juice
  • 1 quart ( or so) salad oil

Directions

  1. Mix everything together, let sit for about a half hour, then stir again and serve.
