%20I%20always%20like%20to%20put%20some%20Christmas%20music%20on%20the%20stereo%20and%20spend%20an%20afternoon%20making%20a%20batch%20of%20my%20own.%3C/p%3E%3Cp%3EYou%20can%20buy%20very%20good%20already%20prepared%20mincemeat%20in%20jars%20of%20course.%20There%20really%20are%20some%20lovely%20versions%20out%20there.%20(Marks%20and%20Spencer's%20come%20to%20mind!)%20Or%20you%20can%20be%20really%20industrious%20and%20make%20your%20own!%20It's%20not%20all%20that%20hard%20and%20is%20quite,%20quite%20delicious!%20I%20sometimes%20add%20chopped%20glace%20cherries%20and%20or%20dried%20cranberries%20to%20mine%20as%20well,%20depending%20on%20what%20kind%20of%20mood%20I%20am%20in.%3C/p%3E%3Cp%3ETodd%20just%20can't%20get%20enough%20of%20them.%20(I%20confess%20.%20.%20.%20neither%20can%20I!!)%3C/p%3E%3Cp%3E*Open%20Mince%20Pies*%3C/p%3E%3Cp%3EMakes%202%20to%203%20dozen%3C/p%3E%3Cp%3EThese%20pies%20have%20a%20lovely%20flakey%20pastry%20that%20is%20made%20entirely%20in%20the%20food%20processor.%20You%20can%20use%20your%20own%20homemade%20mincemeat,%20or%20purchased.%20I%20have%20given%20the%20homemade%20recipe%20below.%20It's%20the%20best!%3C/p%3E%3Cp%3EFor%20the%20Pastry:%3C/p%3E%3Cp%3E450g%20of%20plain%20flour%20(3%201/2%20cups)%3C/p%3E%3Cp%3E250g%20of%20unsalted%20butter%20(1.1%20cups)%3C/p%3E%3Cp%3Ethe%20finely%20grated%20zest%20of%20one%20lemon%3C/p%3E%3Cp%3E150g%20of%20icing%20sugar,%20sifted%20(2/3%20cup)%3C/p%3E%3Cp%3E2%20small%20free%20range%20egg%20yolks%3C/p%3E%3Cp%3Emilk%3C/p%3E%3Cp%3E1%20quantity%20of%20mincemeat%20(see%20recipe%20below)%3C/p%3E%3Cp%3EIcing%20sugar%20for%20dusting%3C/p%3E%3Cp%3ETo%20make%20the%20pastry,%20place%20the%20flour%20and%20butter%20into%20a%20food%20processor.%20Give%20it%20a%20quick%20blitz%20at%20high%20speed%20to%20reduce%20it%20to%20a%20crumb%20like%20consistency.%20Add%20the%20lemon%20zest%20and%20the%20icing%20sugar%20and%20give%20it%20another%20quick%20blitz.%20Add%20the%20egg%20yolks%20and%20enough%20milk%20to%20bring%20the%20dough%20together%20while%20the%20motor%20is%20running.%20Place%20into%20a%20zip%20lock%20bag%20and%20allow%20to%20chill%20in%20the%20refrigerator%20for%201%20hour,%20or%20overnight.%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20190*C/375*F/%20gas%20mark%205.%20Working%20with%201/2%20of%20the%20pastry%20at%20a%20time,%20roll%20it%20out%20on%20a%20lightly%20floured%20board%20to%201/4%20inch%20thickness.%20Using%20a%20fluted%20round%20pastry%20cutter,%20cut%20into%20rounds%20to%20fit%20into%20nonstick%20bun%20tins..%20(shallow%20tart%20tins)%20Place%20in%20the%20tins%20and%20fill%20with%20a%20heaped%20teaspoon%20of%20mincemeat.%20Roll%20the%20trimming%20out%20and%20cut%20into%20star%20shapes%20or%20Christmas%20trees%20slightly%20smaller%20than%20the%20diameter%20of%20each%20pie.%20Place%20in%20the%20centre%20of%20each,%20on%20top%20of%20the%20mincemeat.%20Bake%20for%2015%20to%2020%20minutes,%20until%20the%20pastry%20is%20a%20pale%20gold.%20Leave%20to%20cool%20before%20slipping%20out%20of%20the%20tins.%20Dust%20with%20icing%20sugar.%20Serve%20warm%20or%20cold.%20To%20reheat,%20place%20into%20a%20170*C/325*F/%20gas%20mark%203%20oven%20for%20five%20minutes.%20Store%20in%20a%20tightly%20covered%20container.%20These%20can%20be%20quite%20successfully%20frozen.%3C/p%3E%3Cp%3ECombine%20all%20the%20ingredients%20in%20a%20bowl%20and%20set%20aside%20for%20at%20least%2012%20hours%20to%20macerate.%3C/p%3E){kind=link}
