Directions

  1. Preheat oven to 450 degrees
  2. In a small bowl, mix scallions and 3 tsp olive oil
  3. Cut bread into 4 inch pieces and slice in half
  4. Spread oil / scallion mix over 4 pieces of bread
  5. Place 1 slice of Gouda cheese on each piece of bread, salt and pepper to taste and place in oven and bake for 5-7 minutes
  6. While baking, pan fry eggs
  7. Place eggs on open face sandwich and serve hot

    OMG!!! This looks sooo good! I'll make next weekend. My step son is coming up from Concord for his 20th. birthday and I know that he'd love this for breakfast, lunch, or dinner!
