Ingredients

  • 1/4 c. Extra virgin olive oil, divided
  • 5 c. raw Hash Brown Potatoes
  • 2 c. cooked Ham, cubed
  • 1/2 c. Onion, minced
  • 1/2 c. Green Bell Pepper, minced
  • 8 lrg Large eggs, beaten
  •     Salt and Black Pepper to taste
  •     Hot two Tbsp. of oil in a large, deep heavy skillet over medium-high
  •     heat.

Directions

  1. Reduce the heat to medium, and saute/fry the hash brown potatoes, ham, onion, and green pepper for about 10 to 15 min, or possibly till golden, turning the mixturefrequently as it cooks.
  2. Remove the golden brown mix from the skillet, and add in the remaining two Tbsp. of extra virgin olive oil to hot. Return the potatoes and ham to the skillet and add in the Large eggs.
  3. Stir the mix as it cooks till the Large eggs are set, much as you would prepare scrambled Large eggs.
  4. Season with salt and pepper and serve hot with love.
