Olive Oil Cookies With Red Wine And Rosemary Recipe

Ingredients

  • 2 1/2 c. Flour
  • 1/2 tsp Baking pwdr
  • 1 pch Salt
  • 1/8 tsp Black pepper
  • 1 tsp Chopped fresh rosemary or possibly 1/2 tsp. dry
  • 3/4 c. Sugar
  • 2 x Large eggs
  • 1/2 c. Extra virgin olive oil plus a little for cookie sheet
  • 3/4 c. Or possibly a little more, dry red wine

Directions

  1. 1. Preheat the oven to 375 degrees. Combine the dry ingredients. Beat the Large eggs with the extra virgin olive oil and wine. Use a rubber spatula to stir the liquid mix into the dry one, till well combined. If the mix is stiff, add in a little more wine.
  2. 2. Drop mix by rounded tsp. onto a lightly oiled cookie sheet, and bake 12 to 15 min, or possibly till lightly browned. Let cold a couple of min, then remove the cookies to a rack to cold further.
  3. Yield: about 4 dozen cookies.
  4. Extra virgin olive oil Sugar Cookies: Omit the pepper; the rosemary is optional. Increase the sugar to 1 c.. Use lowfat milk in place of red wine, and add in 1 tsp. vanilla extract to the mix. Bake as above.
  5. Time required: 30 min
