Old-Fashioned Creamed Spinach

Ingredients

  • 2 lbs. fresh Spinach, completely washed and chopped
  • 1 1/3 cups boiling water
  • 2 tsps. salt, divided
  • Pinch of black pepper
  • 3 Tbsps. Butter or Margarine
  • 3 Tbsps. all-purpose Flour
  • 1 cup Milk
  • 1 tsp. grated Onion (optional)

Directions

  1. Rinse the spinach and place into a large saucepan. Add boiling water and 1 tsp. salt.
  2. Cook over medium-high heat until just tender, about 5-8 minutes, stirring occasionally. Drain thoroughly. (Should yield about 2 cups).
  3. In another saucepan, melt the butter. Add flour, salt, and pepper. Mix until smooth, stirring constantly. Gradually stir in milk and cook over medium-high heat; stirring constantly, until the sauce boils and becomes thick. Add onion. Pour sauce into spinach; mix well. Serve piping hot!
