  • 2 tablespoons oil
  • 1/4 teaspoon asafoetida powder
  • 1 teaspoon black mustard seeds
  • 2 teaspoons urad dal
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomato
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne powder (more, if desired)
  • 1/2 teaspoon cumin powder
  • 3/4 cup tomato sauce
  • 1 teaspoon salt
  • 2 cups fresh okra, sliced, or 2 cups frozen cut okra

Directions

  1. Place oil in skillet over medium heat. When oil is hot, but not smoking, add asafoetida, mustard seeds, and urad dal. When mustard seeds pop and urad dal turns golden, add onion and tomato. Stir-fry for a minute.
  2. Add turmeric powder, cayenne powder, cumin powder, tomato sauce, and salt. Cook the seasonings with onion mixture for a minute or two.
  3. Add okra and stir for a minute or two.
  4. Cover and cook over low heat until okra (about 2 to 3 minutes) is tender.
