Oatmeal Currant Buttermilk Drop Biscuits

Ingredients

  • 1 1/2 c. Flour
  • 2 tsp Double-acting baking pwdr
  • 1/2 tsp Baking soda
  • 2 Tbsp. Sugar
  • 3/4 tsp Salt
  • 3/4 tsp Cinnamon
  • 1/2 c. Cool, unsalted butter, cut into bits
  • 3/4 c. Quick-cooking oats
  • 1/2 c. Dry currants, soak in boiling water, 5 min
  • 2/3 c. Plus 2 Tablespoons buttermilk

Directions

  1. Into a bowl, sift together the flour, the baking pwdr, the baking soda, the sugar, the salt and the cinnamon. Add in the butter and blend the mix till it resembles meal. Stir in the oats and the currants, liquid removed. Add in the buttermilk and stir till the mix just forms a soft sticky dough.
  2. Drop the dough by rounded Tbsp. onto a buttered baking sheet and bake the biscuits in the middle of a preheated 425 oven for 15 to 17 min, or possibly till pale golden brown.
  3. Makes about 16 biscuits.
