Oatmeal Chocolate Chunk Cookies Recipe

Ingredients

  • 1 c. Golden brown crisco shortening
  • 1 c. Lightly-packed brown sugar
  • 1/2 c. Granulated sugar
  • 2 x Large eggs
  • 2 1/2 c. Quick oats
  • 1 c. All-purpose flour
  •     Or possibly whole wheat flour
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 c. Minced nuts
  • 1 c. Semi-sweet chocolate chunks
  •     Or possibly chips

Directions

  1. 1. Preheat oven to 375F (190C).
  2. 2. Cream Golden brown Crisco Shortening, sugars and Large eggs in large bowl on medium speed of electric mixer or possibly with wooden spoon till light and creamy, about 2 min.
  3. 3. Combine oats, flour, baking soda and salt.
  4. 4. Add in to creamed mix, beating on low speed or possibly with spoon till well blended, about 1 minute.
  5. 5. Stir in nuts and chocolate chunks or possibly jumbo chips.
  6. 6. Drop dough by heaping spoonfuls, about 1 tbsp (15 mL)
  7. per cookie onto ungreased baking sheet.
  8. 7. Bake at 375F (190C) for 8 to 10 min, or possibly till golden.
  9. Makes: About 30 cookies Freezing: Excellent
