How do you dress up your lunch box? I don’t think it really matters which type of container you choose to carry your lunch in, it’s what’s inside that counts! Especially when it comes down to the the sweet squares to end your meal.

This month, the Recipe Redux theme is “Brown Bag Bars and Bites.” Whether you pack your lunch in a Bento Box, a brown bag or a retro cartoon lunch box, don’t forget the small squares or round bites – they can pack a punch of nutrition into a sweet or savory taste!

But I save the best part for last and top of my lunch with a touch of sweetness. These Nutty Protein Bars are made with nuts, seeds, coconut oil, maple syrup and cacao.

They are the perfect way to wrap up healthy lunch. The nuts and their protein help to keep me feeling full. The rest of the ingredients ~ well they just add to the flavor.

Nutty Protein Bars

INGREDIENTS

INSTRUCTIONS

Pre-heat oven to 350

Heat the maple syrup and coconut oill over low heat.

Once oil has melted stir well to combine

Add the nuts, seeds, cacao and flaxseed meal in a large bowl

Pour the maple syrup and coconut oil mixture over the nut mixture and combine until all ingredients are covered with syrup mixture

Spread a 1/2 tablespoon of coconut oil to an 8X8 baking pan

Add the nut mixture into pan and spread evenly

Bake at 325 for 15 minutes

Remove from oven; once cool enough to touch, place parchment paper on top of mixture and gently press down on mixture to help it stick together

Let cool in refrigerator and slice into squares

Store in refrigerator
