Not So Impossible Veggie Pie Recipe
Ingredients
- 1 cup chopped tomatoes
- 1 cup shredded zucchini
- 1/2 cup chopped onion
- 2 tablespoons chopped, fresh basil
- 1 cup reduced fat shredded cheese (I used a 3 pepper blend)
- 1 cup all purpose flour
- 1 tablespoon non-fat dry milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 tablespoon coconut oil or vegetable shortening
- 3/4 cup skim milk
- 2 eggs, slightly beaten

%20and%20made%20an%20Impossible%20Zucchini%20Pie.%20It%20was%20really%20tasty,%20but%20even%20though%20I%20used%20a%20%22heart%20healthy%22%20mix,%20I%20wondered%20if%20making%20my%20own%20might%20be%20just%20a%20tad%20bit%20healthier.%20Tonight,%20I%20gave%20it%20a%20try.%3C/p%3E%3Cp%3EOf%20course,%20I%20cruised%20around%20the%20Internet%20to%20check%20out%20homemade%20baking%20mix%20recipes,%20and%20there%20are%20quite%20a%20few%20out%20there,%20all%20pretty%20similar.%20The%20problem%20was%20that%20I%20didn't%20want%20a%20boatload%20of%20the%20stuff.%20I%20just%20wanted%20enough%20of%20the%20mix%20for%20one%20recipe.%20So,%20I%20concocted%20my%20own%20mini%20version.%20You%20will%20see%20a%20tablespoon%20of%20powdered%20non-fat%20milk%20in%20there...if%20you%20don't%20have%20it,%20I%20really%20don't%20think%20it%20will%20make%20all%20that%20much%20difference.%20I%20%20like%20to%20keep%20it%20around%20for%20bread%20making,%20as%20it%20gives%20a%20little%20richness%20to%20the%20dough.%20All%20of%20my%20measurements%20were%20approximate.%20Feel%20free%20to%20substitute%20some%20of%20your%20favorite%20veggies...olives?%20shredded%20carrots?%20green%20peppers?%20The%20sky%20is%20the%20limit.%20You%20could%20even%20add%20some%20pepperoni%20or%20sausage,%20along%20with%20some%20Italian%20seasonings,%20for%20a%20pizza%20casserole.%20At%20any%20rate,%20I%20was%20happy%20with%20the%20way%20it%20turned%20out.%3C/p%3E%3Cp%3ENot%20So%20Impossible%20Veggie%20Pie%3C/p%3E%3Cp%3ESpray%20a%20one%20quart%20casserole%20dish%20or%20a%209%22%20glass%20pie%20plate%20with%20cooking%20spray;%20preheat%20oven%20to%20400%20degrees%20F.%3C/p%3E%3Cp%3ESprinkle%20the%20tomatoes,%20zucchini,%20chopped%20onion,%20basil,%20and%20cheese%20evenly%20in%20the%20casserole%20dish%20or%20pie%20plate;%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20whisk%20together%20the%20flour,%20dry%20milk,%20baking%20powder,%20and%20salt.%20Cut%20in%20the%20coconut%20oil%20with%20a%20fork,%20until%20the%20mixture%20resembles%20small%20crumbs.%20Stir%20the%20milk%20and%20the%20eggs%20together%20in%20a%20measuring%20cup,%20then%20add%20to%20the%20flour%20mixture,%20mixing%20until%20well%20blended%20(some%20small%20lumps%20will%20remain).%20Pour%20evenly%20over%20the%20vegetables.%20Bake%20for%2030%20to%2035%20minutes,%20or%20until%20a%20knife%20inserted%20in%20the%20middle%20comes%20out%20clean.%20Cool%20for%2010%20minutes%20before%20serving.%3C/p%3E%3Cp%3EDon't%20worry%20about%20a%20few%20small%20lumps%20in%20the%20batter...they%20will%20disappear.%3C/p%3E%3Cp%3EI'd%20say%20it%20was%20a%20big%20success!%20Now,%20I%20can't%20wait%20to%20try%20some%20of%20the%20other%20combinations%20I%20was%20thinking%20about.%3C/p%3E%3Cp%3EWhat%20kind%20of%20Not%20So%20Impossible%20Pie%20would%20you%20make?%3C/p%3E){kind=link}
