No Flour, No Sugar Blueberry Muffins

You can add or use a combination of carrots bananas or apples and add nuts if you like.

Ingredients

  • 1 C Milk (1%)
  • 2 C Quick Oats (Grind 1/2 of them to flour consistency)
  • 1 Egg
  • 4 Tbls unsweet Applesauce
  • 4 Tbls Splenda
  • 2 tsp. baking powder
  • 1/2 tsp cinnamon
  • Couple dashes salt
  • 1/2 tsp Vanilla
  • 1/2 C Blueberries

Directions

  1. Heat oven to 425
  2. Grease pan
  3. Combine milk and 1/2 oats that you not grind and soak for 15 min.
  4. In seperate bowl beat egg and applesauce, stir in oatmeal, add remaining ingredients and mix.
  5. Bake 15-17 minutes.
