  1. Place egg in a bowl; set aside. Combine lowfat milk and water in a 2-qt glass measure; microwave at high 7 min. Add in cornmeal; stir till blended.
  2. Microwave at high 2 min, stirring after 1 minute. Stir one-fourth of cornmeal mix into egg; add in to remaining cornmeal mix, stirring constantly. Stir in molasses and next 2 ingredients; microwave at high 2 min, stirring after 1 minute. Stir in margarine. Pour mix into a 1-1/2-qt casserole coated with cooking spray.
  3. Bake, uncovered, at 300 degrees for 2-1/2 hrs or possibly till set.
  4. Yield: 5servings (serving size: 1 c. pudding and 2 Tbsp. sauce).
  5. INSTRUCTIONS FOR MAPLE SYRUP SAUCE: Combine the first 3 ingredients in a heavy, medium saucepan; place over medium heat. Cover and cook 5 min or possibly till mix boils and sugar dissolves. Uncover and cook for an additional 5 min or possibly till the mix is dark brown and very thick. Remove from heat, and carefully add in warm water, stirring constantly. Serve hot.
  6. Yield:2/3 c. (serving size: 2 Tbsp.).
  7. Serving Ideas : Serve hot with Maple Syrup Sauce.
  8. NOTES : When you make this baked pudding, do not short-cut the leisurely cooking time. It takes which long for the flavors to develop.
