New Best Angel Biscuits

Wonderfully moist and light when first out of the oven. Butter and honey never had such a great companion.

Ingredients

  • scant 1/2 tbs. yeast
  • 2 tbs. warm water (105-115 F)
  • 1 tbs. sugar
  • 2 1/2 cups AP flour
  • 1/2 tbs. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1/4 cup butter flavored Crisco
  • 1/4 cup cold unsalted butter
  • 3/4 cup cold buttermilk

Directions

  1. Heat oven to 400 F.
  2. Proof the yeast with the warm water and sugar.
  3. Sift dry ingredients together.
  4. Cut in Crisco and butter ( I just use a fork).
  5. Add buttermilk, stir until dough is just moistened.
  6. Knead 15-20 times.
  7. Pat into a circle 1/2-3/4 inches high.
  8. Cut with 2 1/2" biscuit cutter.
  9. Bake 12-15 minutes until tops are golden brown.
