Nestle Toll House Chocolate Chip Cookies - HIGH ALTITUDE STYLE Recipe
Think you can't improve on the Original Toll House Chocolate Chip Cookie Recipe? You can if you live at a high altitude (3500 to 6000 feet) and you make the recommended adjustments by the Nestle Company. I have made these cookies since I was young girl and it was only recently that I noticed the footnote regarding high altitude modifications. The first batch I made using these adjustments gave stellar results. The old cliche that "you can't teach an old dog new tricks" is a myth when it comes to bakers and their tried and true recipes. If you live and bake at high altitudes, consider modifications to help you go from "good" to "great!"
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 2/3 cup granulated sugar
- 2/3 cup packed brown sugar
- 2 teaspoons water
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups Nestle Chocolate Chips (12-oz. pkg.)
- 1 cup chopped nuts (see NOTE in directions below)
- Preheat oven to 375 degrees F.
- Combine flour, baking soda and salt in small bowl.
- Beat butter, granulated sugar, brown sugar, water and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time beating well after each addition.
- Gradually beat in flour mixture. Stir in morsels and nuts.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 8-10 minutes or until golden brown.
- Cool on baking sheets 2 minutes; remove to wire racks to cool completely.
- NOTE: If omitting nuts, add 1 to 2 tablespoons all-purpose flour, making the total amount of flour 2 1/2 cups plus 1 to 2 tablespoons.
